Genmai miso ferments for at least 12 months in 100-year-old cedar barrels under the charismatic hands of our experienced Japanese experts. Genmai miso is ideal as a base for miso soups, fish and meat dishes, sauces and dressings. It is also delicious in combination with legumes or vegetables similar to cabbage.
